I know that I normally don’t share recipes with you all and that’s mainly because frankly I am a terrible cook. I’ve shared numerous meal delivery services because I love utilizing them but as my diet has changed and I’m trying to eat low-carb and stick to a close to Keto diet, I’ve had to start experimenting more in the kitchen. After finally having a win of a dinner the other night with these Keto tuna melts, I thought it best I share this recipe with you all!
First off, let me say that while this follows Keto, I wouldn’t recommend this for a meal by itself. Actually, I take that back. I would for breakfast! This makes a great breakfast bite especially if you’re the type that likes to grab and go. It has protein and fat, both of which are needed on a Keto diet, and are good for you, but it is lacking any greens. So, to round out our dinner we enjoyed our Keto Tuna Melts with a green salad I mixed together with kale and arugula, cherry tomatoes, celery, pistachios, and avocado. I personally like to have well rounded meals, of which always include veggies and/or a salad. It makes me feel better when I’m eating all (or mostly all) the colors in the rainbow 🌈
Keto Tuna Melts
What you’ll need:
2 cans of tuna (I prefer in water and no salt added)
4 eggs
1 cup vegan mayo
1 cup cream cheese
1 cup shredded cheddar cheese
garlic salt and pepper to your liking
Step 1: Preheat the oven to 350
Step 2: Mix the eggs, mayo, and cream cheese into a medium size bowl with a handheld mixer.
Step 3: Add in the two cans of tuna, shredded cheese, and garlic salt and pepper to taste. Mix together with a spoon until its mixed evenly.
Step 4: Take a 12 count muffin tin and grease it lightly.
Step 5: Spoon in the mixture into all 12 muffin spots. They should fill in about 2/3 of the way to the top.
Step 6: Bake in oven for 15 minutes.
Step 7: Take Keto Tuna Melts out of the oven. Let sit for a few minutes then scoop out and plate.
Step 8: Enjoy with your family because EVERYONE, even your picky eaters are going to LOVE these!
