After picking up some fresh Mahi Mahi from the store the other day I got the idea to try and make a restaurant favorite, macadamia nut crusted Mahi Mahi. I’ve never tried it before so I was a little worried it wasn’t going to turn out as good as I’d hoped. Thankfully, I was worrying for nothing because even with making a few changes to the recipe I was working off of the Mahi Mahi turned out fantastic!
I’ve adapted my recipe from Food Network.
Ingredients:
5 ounces (about 1 1/4 cups) coarsely ground, roasted & unsalted macadamia nuts.
1/2 cup bread crumbs
2 tablespoons all-purpose flour
1/4 cup butter, melted
Extra Virgin Olive oil, for brushing foil
4 (6 to 8-ounce) mahi mahi fillets
2 tablespoons light coconut milk
Directions: Preheat oven to 425 degrees F. In a medium bowl, stir together the nuts, bread crumbs, flour, and butter. Set aside.
Place a piece of aluminum foil on a baking sheet and brush it liberally with extra virgin olive oil. Place the mahi mahi on the foil. Bake for 5 minutes. Remove from the oven and brush each fillet with the light coconut milk. Divide the nut mixture among the tops of the 4 fillets, patting the mixture to spread and adhere to the fillets. Return to the oven and bake for 10 minutes, or until the crust is golden brown.
Remove from the oven and allow to stand 10 minutes before serving. Enjoy!
