I saw this recipe on Tablespoon for a top ramen grilled cheese sandwich and it sounded so out there and good that I had to try making it for Justin and I. Maybe it was the fact we were on a juice cleanse when I saw the recipe but my mouth was watering just thinking about it. Now I don’t eat meat so the version they had would not work but an easy swap of the bacon for avocado and I was good to go! Literally our second or third meal after the one week cleanse was over I decided to make it.
What You’ll Need:
1. 2 packets of Top Ramen (1 bag per sandwich)
2. 2 eggs
3. Pepperjack cheese
4. Spices of your choice for added flavor (I used Teck Sauce)
5. 2 ripe avocados
6. Coconut oil spray
Cook the Top Ramen bags just like you would normally do. Let stand for a couple minutes to cool down and strain the water out. In a small bowl mix 2 eggs together and add spices to your liking. Mix the egg and spice mix in the pot with your cooked Ramen Noodles. On a baking sheet spray a thin layer of the coconut oil spray. Turn the burners on and with a spoon place the Ramen Noodle mix on the pan flattening out into squares the size of slices of bread. Let cook on each side until they start to get crispy. After both sides have been cooked add slices of pepperjack cheese and let melt. Right before pulling off the heat add slices of avocado to one side of the sandwich and flip second Ramen slice on top. Press together with spatula, plate, and enjoy. Now I do have to add while I used some healthier ingredients this is by no means a healthy meal and I definitely had a tummy ache afterwards but it was well worth it!
