This may sound like an unlikely pairing but if you’ve ever done a juice cleanse you’d know that mixing fruit like an apple, mango, or pineapple with greens is a delicious and refreshing juice. So blending kale with pineapple and adding in you’re favorite liquor, mines champagne, you have yourself a healthy cocktail! What you’ll need for your pineapple and kale cocktail:
Juicer – I have a Breville juicer from William Sonoma
1 head of organic kale
2 cups pineapple juice
1 bottle of champagne
You will first need to juice the kale. Mix the kale juice with the pineapple juice so that is is well blended. In a shaker mix the pineapple and kale juice with the champagne. Using a strainer pour the green cocktail into your champagne or cocktail glasses and enjoy! This last step is super important so that you don’t end up with a foamy top layer in your drink. I have experienced this first hand and it is no bueno! I literally poured a splash of my pineapple and kale juice over some champs and within seconds green foam started growing over my glass. So I asked my favorite bartender at Cocina Central how he makes their pineapple and kale cocktails so that his guests, me included, can enjoy a refreshing cocktail sans foam and that’s the trick he told me.
